Baked Hasselback Potatoes with herbs


Whether mashed, baked or roasted, people often consider potatoes as comfort food and the number one vegetable crop in the world.  Potatoes are naturally gluten free. an ideal substitution for some of your favorite bread, grain and pasta based dishes, potatoes add a boost of nutritional benefits too. People eat potatoes in the form of greasy French fries or potato chips, and even baked potatoes are typically loaded down with fats such as butter, sour cream, melted cheese and bacon bits. Baked potato is an exceptionally healthful low calorie.  


           My version of baking with herbs will blew your socks off from the very first bite. 








Ingredients

(i)    7-8  medium all-purpose potatoes

(ii)   3 tablespoon olive oil

(iv)  1 tablespoon dried oregano

(v)  1 tablespoon parsley

(vi)   1 tablespoon mint 

(vii)  1 tablespoon thyme 

(viii) 1/2 tablespoon black pepper

 (ix)  salt to taste 


Directions: 


(i) Preheat oven to 250 degree C. Slice each potato crosswise at 1/8 -inch intervals, cutting to within 1/4 inch of the bottom. 

(ii) Arrange potatoes in a dish. Drizzle 2 tablespoons of olive oil evenly over potatoes, and sprinkle with all herbs and salt. 

(iii) Bake potatoes at 200 degree C on middle oven rack for 30 minutes , drizzle with remaining olive oil, sprinkle black pepper over potatoes and bake 20 more minutes until potatoes are golden.
