Couscous with Cabbage Roll up

Evening seems to be dull if you are  with a workaholic husband and miles away from dazzling city. To make my  evening buoyant  it's better to bring  a wriggle  in our  dinner table by adding some different flavour. So, I spent  just half an  hour in kitchen , did little experiment  and  made this quick and easy couscous recipe  which is  perfect for evening and healthy cabbage roll up to add some more taste. 

Couscous with Cabbage Roll up





Ingredients:

(i) 200 gm  Couscous (available in super market)
(ii) 1 1/2  cup boiling water
(iii) 2 tablespoon  olive oil/ butter optional
(iv) 1 onion finely chopped
(v) pinch of salt 

Method: Couscous

(i) Combine olive oil, onion and salt with couscous.
(ii) Boil 1 1/2 cup water and pour in couscous.
(iii) Cover and wait for 10 minutes.
(iv) Remove the cover and stir with fork .


Ingredients for Cabbage Roll up

(i) 12 cabbage leaves.
(ii) 1/2 cup minced onion
(iii) 2 cup minced meat / minced tofu or paneer (your choice) 
(iv) Salt to taste
(iv) 1 tsp back pepper
(v) 1/2 tsp garlic powder
(vi) 1/2 cup tomato sauce
(vii) 2 cup tomato puree
(viii) 1 tbsp brown/ white sugar
(ix) 2 tbsp Worcestershire  sauce
(x)   1 ibsp Schezawan sauce
(xi)  1 tbsp soy sauce
(xii) 2 tbsp mixed herbs , divided
(xiii) 2 tbsp Olive oil
(xiv) 1 onion chopped

Method: 

  • In  a large wide saucepan, bring water to boil and add salt. Add cabbage leaves and cook for 4 to 5 minutes or until softened, drain. 
  • In a skillet, heat 2 tbsp of oil and fry onion until  brown. Add minced  meat, and all the ingredients mentioned above except tomato puree and cook for 10 - 15 minutes. 
  • Place 2 tablespoons of mixture on a cabbage leaf and roll, folding two sides in . 
  • In a large skillet over medium heat, place the cabbage rolls and pour the tomato puree over the top. Sprinkle 1 tablespoon of mixed herb and salt to taste. Cover and bring to a boil. Reduce heat to low and simmer for about 30 minutes, stirring and basting with the liquid often. 
  • Serve cabbage roll up with couscous.
