Fish loaf

Fish has been an important source of protein and other nutrients for humans throughout recorded history. Choose fish twice a week to give your child, The fuel they need to succeed at school. Brain power, strong muscles, healthy skin and a strong heart - fish it all adds up. Fish can be prepared in a variety of ways. It can be uncooked (raw) or can be cooked by baking, frying, grilling, poaching or steaming. Many of the preservation techniques used in different cultures have since become unnecessary but are still performed for their resulting taste and texture when consumed. Fish has been a staple in almost every household in North-east part of India. 

Fish and rice  are two foods that share an irrevocable relationship. To bring a twist in cooking fish, I baked a loaf out of fish that is loaded with lots of  protein and nutrients. It was simple to prepare, easy to put together and delicious. What more could I ask for?




Ingredients: 

(a) 500 gm ground Basa  fillet
(b) 1/2 cup bread crumbs
(c) 2 eggs
(d)1/2 tsp black pepper
(e)1 tsp dried thyme
(f)1 tsp red chili powder
(g)1 onion roughly chopped
(h)1 carrot peeled & broken
(i) 1 red bell pepper / capsicum  (chopped)
(j) 3 cloves (chopped)
(k) Salt

For Glaze:
(a)1/2 cup tomato ketchup
(b) 1 table spoon cumin powder
(c) 2 tablespoon Worcestershire  sauce
(d) 1 tablespoon hot pepper sauce
(e) 1 table spoon honey.

Directions:

In a bowl, combine breadcrumbs, black pepper, chili powder, thyme,onion, carrot, garlic, red bell pepper / capsicum. Now combine this vegetable mixture with ground basa fillet  and eggs and place in a lightly greased loaf pan, or form into a loaf and place in a lightly greased baking dish.

In a separate bowl, combine tomato ketchup, cumin powder, Worcestershire sauce, hot pepper sauce and honey.

Mix well and pour over the fish loaf.

Bake at 175 degrees C for 1 hour and serve hot.
