Tofu with olive skewers

Tofu is a versatile ingredient with many health benefits. A staple ingredient in  Thai and  Chinese cookery, it can be cooked in different ways to change its texture from smooth and soft to crisp and crunchy. Tofu has an amazing ability to work with almost all types of flavours and foods. Extra firm  tofu  is  best for baking, grilling and stir-fries, while soft tofu is suitable for sauces, desserts, shakes and salad dressings. Of course, it is up to you to experiment. Try slicing, marinating and grilling it or chopping it up into smallish pieces and frying it with garlic until golden. Silken tofu is a creamy, softer product.

Ingredients :

Skewers

250 gram firm tofu cut into 1 inch cubes
1 cup green /black olives
  
Honey lemon with herbs sauce :

3 tablespoons olive oil
2 tablespoons honey
1/2 tablespoons lemon juice
1 teaspoon dried oregano
1 teaspoon dried parsley
1 teaspoon thyme
1 tablespoons chilli flakes
1 teaspoon garlic powder
Salt

Directions : 
Whisk together the honey, olive oil, all the herbs, chilli flakes, lemon juice, garlic powder  in a ceramic dish.

Add the tofu and olives and  toss to coat. Cover and place in the fridge, turning once, for 3-4 hours to marinate.
Meanwhile, drain the tofu and reserve the marinade. Alternately thread the tofu,and olive evenly among the skewers. 

 Lightly spray the skewers with  the reserved marinade and serve as finger food in  party.
