Jaggery Cake with Apple

Dessert aficionados are always on the hunt for the next popular confection. While usually their finds include intricately designed creations that are bright, colourful, or dripping in chocolate. I'm talking about my jaggery cake, made it with wholewheat flour (atta) , added apple and everything came together really well. This is best served warm from the oven. Next time , I might add zest of  an orange, walnuts to the recipe, or may be dried cranberries.


Ingredients: 100 gm jaggery granules /or chopped
100 gm unsalted butter
1 1/2 cup wholewheat flour
1 cup water
2 apples
1 tablespoon baking powder
1/2 teaspoon baking soda
3 eggs
1 tablespoon vanilla essence

Method :
Make a slice  of  an apple and  caramelized.  Now in a baking dish, put caramelized apples and keep in freeze for 10 minutes to set apples.

Make small pieces of apple and keep aside.

Place the jaggery, butter, water in a heatproof bowl. Heat in microwave for a minute, until butter has melted. Whisk well until the jaggery and butter have combined.Add vanilla extract, baking powder and baking soda. Whisk well to mix.

Whisk in the eggs one by one. Now fold in the wholewheat flour gently. Add small pieces of apple in this mixture.

Take out baking dish from freeze and pour the batter. Bake for approximately 20-25 minutes until risen and light golden brown.

Allow to cool for 10 minutes, then gently loosen sides to demold. Serve warm as is.

I made this small breakfast cup out of this batter. You can add this healthy breakfast cup in your kid's tiffin, or in tea party.
