Crispy Zucchini Chips

Lets go vegan today and it's better than those chips.

I  always try something a little more healthier and something that included veggies and greens. When I found few zucchinis in my fridge to make these glorious addicting chips. 

Trust me when I tell you that you will not be able to stop eating these. It is easy to make and a little different from regular zucchini recipes. You can most certainly bake these as a healthier alternative, but I fried them to get that really crisp and golden crust.
 


Total Cook time: 25 minutes.

Ingredients


2 Zucchinis, thinly sliced

1 cup bread crumb

2 eggs

1/2 cup Parmesan cheese

1/2 cup all purpose flour

1 tablespoon ground black pepper

Salt

Oil for fry

Procedure

In a large skillet, heat oil over medium heat.

In a bowl, combine bread crumbs,  Parmesan cheese, salt and black pepper  and keep aside.

In a separate plate, place flour and dredge zucchini slices in flour, dip into eggs , then rub with Parmesan mixture.

Add zucchini slices to the skillet, 4 to 5 at a time and fry until evenly golden and crispy about a minute on each side. Transfer  to a paper towel to absorb extra oil. 

Garnish with spring onion.

Serve hot with your favorite kind of dipping sauce. 



You'll be eating these crispy chips all day long.
