Crunchy Coconut Fish

 We all needed a little bit of a chicken break.

I love to create a new fish recipe once a week. Coconut is my favorite so I always try to make something new with it. The easiest and most effortless 20 min meal ever from start to finish. Here we go with crunchy  chicken  fish, it goes right in the pan from start to finish, making your life just that much easier.




Ingredients:


500 gm Fish fillets
2 eggs
1 cup Orange juice (tetra pk)
1/2 cup plain flour
2 cups shredded coconut
Salt
Oil for frying

Method:


In a  wide and shallow bowl, beat together the egg, salt  and orange juice. Spread the flour and the coconut on separate plates.

Cut the fish fillet in big size and dry off as much as possible.

Dip fish fillet first in the flour, then in egg mixture and coat well in coconut 


In a pan heat oil over medium heat, add fish. when coconut starts to brown, carefully turn over. when fish is cooked, remove from pan. Add more oil to pan if necessary and repeat with the remaining fish.

Serve hot with your choice of dipping sauce. I like tartar sauce , it goes well with this fish.
