Mustard Chicken


This healthy crisp tender chicken with the creamiest mustard is very easy. Now. two things here. I know many of you like white meat. Sure, chicken pieces can be substituted but I found bone in, skin on chicken pieces are best here. 






Ingredients you need to cook mustard chicken:


7-8 chicken pieces with bone and skins

1 cup chicken broth

1/2 cup freshly grated coconut

1/2 cup Dijon mustard (available in all  supermarkets)

8 garlic cloves, paste

1/2 cup onions paste

1 tablespoon honey

Salt and ground black pepper

2 tablespoons Red chili flakes

1 cup spinach chopped

2 tablespoons butter

Directions: 


Preheat oven at 250 Degree C.

Melt butter in skillet. Season chicken pieces with salt and pepper and cook until chicken is golden brown, turning occasionally, about 5 minutes per side. 

Melt remaining butter in skillet. Add onion and garlic paste and cook, stirring frequently about 2 minutes. Stir in chicken broth, dijon mustard, red chili flakes and spinach, salt and honey.

Bring to a boil, reduce heat and simmer until spinach has wilted and the sauce is slightly thickened about 5 minutes. Return chicken to the skillet. Cover chicken with foil.

 Place in  preheated oven and bake until completely cooked through about 30 minutes.
