Ionian-Bruchetta

This recipe is a wonderful summer appetizer that blends the flavors of Greece and Italy - that's why it is called Ionian-Bruschetta. 


Bruschetta is a fresh, simple and delicious Italian appetizer that can be prepared in minutes and enjoyed any time of the year. In its simplest Italian form bruschetta requires that bread be toasted over real coals, then rubbed down with slices of raw garlic, drizzled with olive oil. Here. I'm sharing a simple method to make at home with just few ingredients from your pantry.




 Toasts up an easy appetizer with tomatoes and fresh spinach and let the snacking or party begin !! 



Ingredients:

1 Garlic bread, long and narrow bread
 2 tablespoons Olive oil

For Toppings:

1 bunch spinach, chopped
1 onion, minced
3 garlic cloves
2 tomatoes, sliced
1/2 cup fresh cream
2 tablespoons Mozzarella Cheese
1 teaspoon freshly ground black pepper
1 tablespoon oregano, dried
1 tablespoon olive oil
Salt

Method:

Brush bread slices with olive oil and keep aside.

In a skillet over moderate heat, add olive oil and fry minced onion and garlic and stir it for a minute, now add chopped spinach into it and cook , add salt and pepper according to your taste,  stirring until wilted and tender, about 4 to 5 minutes.

Then add mozzarella and cream then  cook again for a minute. Don't cook for a long after  you add cheese and cream. Now sprinkle oregano in it for additional aroma and flavor.




Now place a foil in a tray and put each slices of garlicky bread. Place slices of tomatoes first then spread spinach mixture on each slice.

Serve hot.
