Pineapple Chicken

Its a season of pineapple and love to eat it raw or cooked. Pineapples are so juicy and flavorful that you can add it with anything from Cake to Chicken. Sweet, tangy pineapple chicken is such an easy way to add more fruit into your life in summer. Each portion has nearly one and half servings of fruit and is also a good source of Vitamin A and C.

 

Ingredients you need :


1 kg assorted chicken pieces  with bone-in and  skin-on

1 cup pineapple juice

2 tablespoons soy sauce

2 tablespoons corn startch

2 cloves garlic, minced

1 teaspoon ginger, minced

2 cups  pineapple chunks

1/4 cup honey / brown sugar optional

1 teaspoon black pepper

Salt to taste
 
1 teaspoon sesame seeds

2 tablespoons fresh parsley leaves, chopped

Method:

Combine pineapple juice,  honey, soy sauce, minced ginger and garlic, salt and pepper in a large bowl, stir well.

In a non stick pan over medium heat, place chicken pieces and pour pineapple juice mixture over chicken pieces. Cover and cook on low heat about  1 and 1/2  hour, basting every after 15 -20 minutes.

when chicken is half cooked  nearly after 45 minutes, place pineapple chunks over chicken and again cover it and cook.


In a small bowl, whisk together 1/4 cup water and corns tartch. Stir in mixture into the pan. Cover and cook on high heat for 10-12 minutes, or until sauce is thickened.

Garnish with sesame seeds and parsley, Serve immediately.
