The delicate flavor of scallops with spinach mousse is a killer combo and topped with chopped walnuts compliments them quite well.
Scallops are one of the most delicious food if seared properly. Pan-seared scallops in the bed of spinach mousse is heavenly and if desired serve with couscous or rice for a delicious meal.
Ingredients:
For pan-seared scallops, all you need:
1 packet scallops (available in all super markets)
2 tablespoons butter
1 teaspoon black pepper
Salt to taste
2 tablespoons Walnuts, chopped, if desired
Method:
Wash scallops and place in paper towel to dry.
Rub the scallops with salt and pepper .Add the butter to a pan on high heat and gently add the scallops, making sure they are not touching each other.
Sear the scallops for 2 - 3 minutes on each side and keep aside.
Ingredients for Spinach Mousse:
Spinach 2 bunch, chopped
1/2 cup cream
2 eggs white
1 tablespoon Freshly grated Nutmeg
2 tablespoons onion, finely chopped
1 teaspoon pepper
Salt
Method:
Wash the spinach and drain it. Now add the spinach, onion, salt, pepper and nutmeg to the food processor, and process for a minute. Adjust seasoning to taste. Pour the egg white through the feeding tube, with the motor running, and process for 30 seconds.
Keep in fridge and chill for 2-3 hours. Take out from the fridge and stir 1/2 cup fresh cream into the chilled spinach mousse.
In a plate, pour spinach mousse and gently place pan-seared scallops , sprinkle chopped walnuts over it. Garnish with the petals of fresh flower to look magnificent. You can garnish with anything, you like.
