I have to admit, I'm not a huge fan of carrot , so decided to change the recipe and leave the carrots with some texture and flavor by only cooking them until fork tender. I do experiment with veggies to get different flavor.
Veggies gets a saucy makeover with cream and fresh herbs of your choice for a whole new way to love carrots.
Ingredients:
6-8 medium size carrots
1 tablespoon butter
1 cinnamon stick
1/2 ground cinnamon powder
1/2 cup cream
Salt and pepper to taste
Fresh herbs of your choice for garnish
Method:
Peel and cut carrots into long strips. Now add carrots in a pan with enough water and cover it. Add cinnamon stick for flavor. Bring to boil over high heat and cook for 8-10 minutes or until carrots are tender.
Now remove carrots from water. In a nonstick pan add butter, carrots. ground cinnamon, adjust salt and pepper mix well. add cream and cook for a minute or until cream is thickened. Adjust seasoning if necessary. Place on serving bowl and garnish with dill/chives/parsley, whatever you like, and serve hot.
