Crispy Asparagus

Asparagus has been used as a vegetable and medicine since long time. Once they are in hand, the question, then comes in mind  how to eat or cook them.You need to know about how to cook asparagus such as  Blanched: Drop asparagus into some boiling water, cover and cook for 4 - 5 minutes, take them out and serve straight way with your favorite sauce.  Steamed:  When you steam , place asparagus in a steaming basket with little water underneath, cover and cook for 3-4 minutes.  Griddled : It will be more tastier if you griddled in a pan, just simply drizzle with a little olive oil , salt and garlic powder, and turn occasionally.  Roasted: Asparagus develops a rich flavour when roasted. Simply pre-heat the oven at 180 degree C, line a tray with foil, drizzle with olive oil and season with salt and pepper. You can add  fresh cloves of garlic and a little freshly grated lemon zest. Roast for ten minutes. You can use roasted asparagus with a creamy pasta. Stir fried: You will find asparagus in Asian cooking, either in salads or in stir-fries. It needs hardly a minute or so in a hot wok, so always remember to add it in towards the end of cooking the rest of your dish.  A splash of soy sauce and a sprinkle of sesame seeds work well. Raw : You can in fact eat raw asparagus. Raw asparagus is great with feta cheese.

when we were in Bhutan, during spring season, we see the start of the asparagus. Of course, asparagus is commonplace everyday at the super market in Bhutan, but it is always worth hunting out those fresh green spears from a local food market or even fresh from the field. The best accompaniments for asparagus are olive oil or a little butter, season with a salt, fresh black pepper and garlic powder and we often add this in our meal.

 In India, it is not grown because of climatic condition, so store bought asparagus  is the ultimate source for us. I tried to treat my guests in party with asparagus in my own way as starter. Today, I'm sharing one of my version of cooking asparagus with you all.



Ingredients:


1 tin asparagus ( I used fresh )

2 eggs, whisked

2 medium potatoes

1 tablespoon red chili flakes

1 tablespoon oregano

Salt to taste

1/2 cup breadcrumb

2 tablespoons Oil for frying

Method:

First boil potatoes, peel it and  add salt, red chili flakes, oregano, mashed it properly and keep aside.

Now take out asparagus from tin and drain excess water and place in a plate.

In a shallow plate, place whisked eggs,  and in another plate place bread crumbs.

Take one asparagus n bind it with mashed potatoes, then dredge in eggs then in bread crumb and fry until golden brown. Like this way fry rest of the asparagus.

                                                                                          
Serve hot with your own choice of dip or sauce.
