I'm very fond of any kinds of beans like dark kidney beans, butter beans, black eyed beans,white kidney beans. We Indian love them cooked as a curry with a slightly sweet and sour taste. But I use these beans in soup, salad, kebabs, rice, etc as this goes well with every recipe.

Ingredients:
2 cups boiled cannellini beans ( white kidney beans )
1/2 bunch mint leaves, chopped
1/2 bunch parsley, chopped
4 cloves, chopped
2 tablespoons fresh lemon juice
Salt and pepper to taste
1 teaspoon lemon zest
2 tablespoons Olive oil plus more for garnish
Directions :
In a food processor, combine all the ingredients except olive oil and pulse until the mixture is smooth. Slowly add the olive oil and process again until you get smooth texture. Taste and adjust the seasoning with salt and pepper. Add lemon juice and mix well.
Transfer the dip into a bowl and drizzle olive oil on top. Serve with crackers or crostini.
