Slow cooker Lamb Shanks

You can throw all of the ingredients in the pot in this no-fuss, super easy  dish. Lamb shanks that are slowly simmered with garlic, onion, carrot, rosemary and wine. Allow about two and a half hours for the lamb to cook on top of the gas stove. Great served with  short grain rice pulao / quinoa / mashed potatoes, as you need something to soak up the wonderful sauce. 


Fantastic dish for dinner, meat, veggies and wine in one dish, AH !! what else you want on weekend.


Ingredients:


4-6 lamb shanks

2 carrots, finely chopped

2 onions. finely chopped

1/2 cup Green beans, finely chopped

1 potato, finely chopped

8 cloves garlic, minced

 Salt and black pepper to taste

2 cups white wine

1 cup chicken broth / water optional

2 tablespoons rosemary (fresh / dried)

2 tablespoons thyme (fresh / dried)

2 tablespoons olive oil

Method:


Marinate shanks with salt and pepper. In a non stick pan, heat oil over medium heat. Cook  shanks in batches until golden brown on all sides, about 10 minutes, and keep aside.

Now add onions, carrot, potato, green beans and garlic to pan and saute until golden brown, about 10 -12 minutes. Stir in wine and  chicken broth / water. Season with rosemary, thyme and salt. Now add fried shanks to pan. pressing down to submerge. Bring to boil and reduce heat, Cover and simmer until meat is tender , about 2 hours.

Remove cover from pan and simmer for another 10-15 minutes. Transfer shanks to platter. Boil juices in pan until thickened.

Place shanks on plate and spoon the juices over  shanks while serve.

Garnish with finely chopped parsley.
