Stuffed Pumpkin flowers with vegetables and cheese

Flowers of  vegetables can be eaten in a different ways, and it's not only healthy tastes good too. Usually we fry it with different batter, today I baked it and it came out real good. You can add sausages or minced meat instead of veggies those who are meat lovers. It's a perfect side dish for lunch and dinner.

Ingredients :

Few fresh pumpkin flowers ( available at local market)

2 eggs

1 cucumber

1 bunch fresh parsley

Salt and pepper

1 cup cheddar cheese

1 onion, minced

2 tablespoons olive oil

Directions:

Wash each flower properly and remove the yellow pistel in the center of flower.


In a mixing bowl combine grated zucchini,  eggs, minced onion, chopped parsley, salt and pepper.

Take each flower and stuffed with the mixture. In a baking tray coated with oil, place each stuffed flower. Drizzle with olive oil and grated cheese on top.

Bake for 20 minutes at 150 degree C.
