Chicken with pumpkin sauce

Chicken cooked with pumpkin is an amazing dish that is very easy to make. Autumn  is here and pumpkins are everywhere. What better than to bring the pumpkin to the dinner table. 


 You know I love sharing easy recipes with you and this is one I wanted to share an awesome recipe I tried with pumpkin. For those who don't know, pumpkin is a great carb. This was savory and so delicious!!

 You will be amazed at how simple this is to make and I'm pretty sure your family will love it. Served with it butter rice or boiled beans or mashed sweet potatoes.





Ingredients:

1 kg chicken pieces
1 cup pumpkin puree
1 tablespoon ginger garlic paste
2 tablespoons honey
1 teaspoon garam masala
1 teaspoon ground black pepper
1 teaspoon red chili powder
Salt to taste
1 teaspoon lemon juice
Parsley, chopped to garnish

Method:

Preheat oven at 250 degree C.

I'm a medium size bowl, whisk together pumpkin puree, ginger garlic paste, garam masala, ground black pepper,  honey, chili powder, lemon juice, salt to taste.

Place a foil in baking dish, then place chicken pieces one by one.

Pour the pumpkin sauce ( mixture) over the chicken pieces and make sure that they are fully coated on tops and bottoms.




Cover the chicken with another foil to avoid burning sauce and bake for 20 minutes at 250 degree C. Then remove them from oven, and baste the tops of chicken pieces with the sauce.

Remove foil and bake for another 20 minutes at 200 degree C until the sauce is thickened and tops of the pieces begins to brown. Take out from oven and keep in room temperature.

Remove chicken pieces from the baking dish and place on serving plate. Now whisk the sauce that remains in baking dish until the sauce is smooth. Pour this smooth sauce over the pieces and garnish with chopped parsley.
