Spaghetti with pumpkin

Spaghetti with roasted pumpkin is a mind blowing dish. The vibrant orange color tells us many things about health benefits of pumpkin and it's an excellent and powerful antioxidant. Spinach will add more food value to this dish. I love to cook with minimum ingredients. So, lets try this my idea of having spaghetti with pumpkin chunks. You can add roasted dry fruits too in this recipe.



Ingredients:

 1 packet Spaghetti
2 cups of roasted pumpkin
4 garlic cloves.chopped
1 onion, finely chopped
2 tablespoons chili flakes
2 tablespoons Olive oil
1 cup spinach
1 teaspoon black pepper
Salt


Directions:

Bake pumpkin in preheated oven for 30 minutes at 250 degree C, until turns soft and light caramalized.



In a large skillet, heat oil and fry onion and garlic, stir frequently so that onion and garlic doesn't burnt . Add chili flakes and cook for another two minutes.

Cook spaghetti for three minute, don't overcook.

Add roasted pumpkin chunks and washed spinach into a skillet and cook for few minutes.

Now add drained  spaghetti  and incorporate them well with pumpkin chunks and spinach.  Season with pepper and salt.

Serve  immediately and add more chili flakes, if needed


Note: Add anything you desire, but always add  roasted pumpkin to get different flavor.
