Chicken with tomato and herbs

Chicken baked with tomato and herbs is delicious and very healthy. Tomatoes are versatile ingredients. They play the leading role in dishes cutting across cuisines.

The most exotic dishes around the world can be transformed by adding a tomato or two.I love tomatoes because of it's eye appealing color and taste.  My easy chicken recipe baked with just roasted tomatoes and few herbs. The idea of baking chicken with roasted tomatoes came in my mind when I saw few Chicken pieces and fresh tomatoes in pantry. Of course fresh thyme and rosemary added more taste that I have grown in my kitchen garden. For a change I have used roasted tomatoes instead of fresh one and that is an additional taste of this dish, I must say.

It's also an easy chicken recipe to rustle up if guests suddenly drop by.


 Ingredients:

500 gram Chicken pieces
200 gram tomatoes
3-4 cloves of garlic
2 tablespoons fresh rosemary / dried (optional)
Few strands of fresh thyme / dried (optional)
1 tablespoon ground black pepper
1 teaspoon  sugar
Salt to taste

Method:

Wash chicken pieces properly and keep aside.

Now roast tomatoes in oven or gas stove. Keep aside and peel the skin.

In a blender put roasted tomatoes and garlic and blend it until you get smooth texture.

In a baking tray, place chicken pieces and pour this tomatoes mixture, add salt, pepper and coat it well. Now put rosemary and thyme on top and bake in preheated oven at 250 degree C, for 40-45 minutes, until chicken cooked well.



Serve it with garlic bread/ noodles or with plain rice.
