Shrimp with pumpkin seeds

Shrimp cooked in pumpkin seeds is delicious.Pumpkin and its seeds make any dish  heavenly. My mother loves the fish dish with pumpkin seeds. So, I thought why not try to make  shrimp dish  with pumpkin seed. It was very delicious and easy to make. But this isn't food to eat quickly while standing up - this is worth taking a seat to linger over. The result is a rich and surprisingly flavorful sauce with just a tinge of heat.




It was creamy but extremely light.


Ingredients :

1 packet shrimp ( available in all super markets)
1 cup raw pumpkin seeds
4 garlic cloves
2 onions, finely chopped
2 capsicum, finely chopped
1 teaspoon oregano
1teaspoon black pepper
Salt 
2 cups water
1 cup cilantro, chopped
2 tablespoons olive oil                            
1 cup cream
  • Method:
  • Toast pumpkin seeds in a skillet over medium heat until they begin to pop up. let it cool. Transfer to a blender Now grind it to a powder.
  • In a blender, add chopped cilantro , onion, garlic, chopped capsicum and 1 cup water. Blend it until you get smooth texture.
  • In a skillet over medium heat add olive oil , pour cilantro sauce and stir continuously for few minutes. Now add pumpkin seeds mixture and cook  for two minutes, until you get a smooth paste. Add 1 cup water and add shrimps and stir well for a minute. Stir in cream and season with salt, pepper and oregano, 1 tablespoon chopped cilantro and keep aside.

  • Take one pumpkin and cut the top in a round shape and scooped out seeds , now pour this shrimp with sauce in pumpkin and cover with silver foil and place a lid on top and in preheated oven at 250 degreeC. Cook for an hour until pumpkin is cooked well. 
  • Transfer pumpkin in a tray and serve hot with rice.
