Beetroot spring rolls

Spring rolls are everyone's favourite as far as I know except few who avoid fried stuff. So, I thought why not make some healthy spring rolls for my veggie guests.

The spring roll is a Chinese dish that has become so popular that it is now available everywhere from bakeries to posh restaurant, in fact frozen
spring rolls are also readily available in supermarkets.But, nothing can beat the impact of creating in your own kitchen perfectly customised to your own taste.

Here, a scrumptious filling of Beetroot with coconut cream perked up with sweet chilli sauce is packed inside ready made spring roll wrappers and deep fried till crisp when you bite into it.Nothing matches this treat as aptly as Sweet chilli sauce.

Ingredients:

Spring roll wrappers

For Filling:
I cup grated beetroot
1/2 cup coconut cream
1 teaspoon red chili powder
Salt
Oil for deep frying

Method:

In a nonstick pan  over medium heat  add grated beetroot,  coconut cream, salt and red chili powder and cook for 5 minutes. Now filling is ready.

Place spring roll wrappers on a flat surface and fill each wrappers with one tablespoon of Beetroot mixture and roll it like a roll. Now cut each roll into half.

In a skillet over high heat add oil and fry each roll until you get golden colour.

Serve this healthy spring roll with sweet chili sauce.
