Winter season and orange, these comes together at every doorsteps. And the content I get by adding orange in my cooking from main course to dessert. It not only enhances taste , it also add incredible aroma.
My mother just love orange and she never spend a single day in winter season without adding an orange in her diet, her love for oranges made me to think cook dishes with orange in different ways.
Today I made carrot with orange reduction as side dish to serve with roasted chicken in lunch and it tastes great. Recipe is too simple and it's sweet and savory taste is awesome.
Ingredients:
250 gram carrot
1 cup fresh orange juice
1 tablespoon butter
1 teaspoon honey
Salt and pepper to taste
Parsley, chopped for garnishing
Directions:
Peel the carrots and cut into long strips and par boil it.
Now in a pan over medium heat, add butter and pour orange juice over it and bring to a boil. Add honey, salt according to taste and boil till juice reduced half.
In a plate place par boiled carrot and pour juice over it and season with pepper.
Garnish with chopped Parsley and serve hot.
