Rice and lentil pulow

Today's recipe is rice and lentil pulow, I love rice like anything. This is such a great go to recipe when hosting vegeterian guests.

A delicious layered rice and lentils is one of my favourite persian food.  Dotted with brightly coloured dried fruits, this is a sweet and savory recipe. Layers of rice and lentils with colourful dried fruits is like a show stopper of dinner table.


Ingredients:

3 cups rice, basmati
1 1/2 cup lentils,
1 onion , chopped
1/ 2 cup raisins
1/ cup deseeded dates
1/2 cup cherry tomatoes
1 tablespoon garam Masala
1 tablespoon red chili powder
Salt
2 tablespoons brewed saffron
Oil for cooking,

Directions:

First cook lentils in salted water until tender. In a skillet over high heat, add oil and fry chopped onion, place lentil , raisins, garam Masala,  red chili powder, salt and mix  it well together. When lentils are ready keep aside.

In a pot, cook rice , add salt and 1 tablespoon cooking oil, cook for ten minutes not more then that, rice should be par boiled.

In a springform baking tin, place one layer of rice , then one layer of  lentil and raisin mixture, like this way place one by one layer.

Arrange the dates and cherry tomatoes on top , seal the tin with silver foil and bake at pre-heated oven at 180 degree C for twenty  minutes.



Open the springform tin slowly on plate while serving and nice colourful layers of rice and lentil will amaze you and your guests.
