Here is an easy and quick way to create a beautiful tart. I love to make tarts using fresh vegetables for a change. You can use anything you like in tarts. This is my breakfast treat on holiday. It is not only an eye catching tart, tastes awesome too.

Ingredients:
For pastry crust
1 1/4 cup plain flour
8 tablespoons butter
Pinch of salt
3 tablespoons ice-cold water
For Filling :
1 1/2 cup white sauce ( I made at home)
2 boiled potatoes
Salt and pepper to taste

1/2 cup cheddar cheese
2 tablespoons fresh mint leaves , chopped
2 tablespoons fresh cilantro, chopped
1 tablespoon olive oil
1 tablespoon olive oil
1 zucchini, make slices and rub with salt and keep aside to remove water from zucchini.
Method:
Make a pastry, by combine flour, butter, salt and ice cold water and knead it with hand untill dough is moistened. Now transfer dough to a work surface and and former into a flat disk. Using a rolling pin flatten dough into a circle and transfer to a tart pan and remove edges. Chill for an hour before you bake. Now bake at pre-heated oven at 180 degree C for 15 minutes and your tart shell is ready.
Filling time: In a bowl, combine white sauce, boiled potatoes, salt and pepper, chopped mint and cilantro, and cheddar cheese together and pour into a tart shell. On top place zucchini slices, drizzle olive oil on top of it and bake at 180 degree C for another 15 minutes to set the sauce properly in tart shell.
