Chicken roast with Dill and Orange

The ideal roasted chicken recipe will leave your chicken golden brown and gleaming, tender and juicy. The crackle of chicken as it roasts and wondrous aroma of  dill and orange zest that perfumes the kitchen provoke a feeling of satisfaction and fullfillment.

The almost universal appeal of roasted chicken stems from its power to comfort. There is nothing better then a properly cooked and delicious roast chicken. Sharing one of my roast chicken with fresh dill and orange zest for a beautifully succulent and colourful meal.





Ingredients:

15 - 16 assorted pieces of chicken

3 tablespoons olive oil

Few cloves of garlic, minced

1/2 cup fresh dill, chopped

3 tablespoons orange juice ( store bought)

Salt and pepper to taste

2 tablespoons orange peel, cut into long strips


Directions:

Rinse chicken pieces under cold water. Dry chicken tboroughly with kitchen towel.

Preheat the oven at 250 degree C.

In a bowl, mix  fresh chopped dill, garlic, orange juice, salt and pepper and keep aside. Rub chicken with this mixture and drizzle the chicken with oil. Sprinkle peels of orange on top.

Place tbe tray in the oven and turn the heat down immediatedly to 200 degree C and cook for an hour. When chicken is cooked take out the tray and transfer the juices of chicken into a bowl. Now you pour this juices over chicken and cook for another 20 minutes to get the tasty, juicy bits from underneath.




Chicken roast is ready to serve now.
