Both comforting and daily dose of vegetables, all in one dish. I just make so much yum recipe with few ingredients, unconplicated, fast, easy and super tasty. It was that flavorful I just couldn't stop sneaking spoonfulls of this dish as I photographed it.
This is powerhouse vegan comfort food, with loads of flavor and solid sustenance from the chickpeas and spinach. The simple tomato and spinach paste is kicked up a few notches with garam masala powder. The combo of spinach and chickpeas is very nutritious, filling and just down right pretty. I served my curried Chickpeas and spinach over rice, it would be awesome if u dip your butter nan in it. Why always palak paneer, why not chole palak today.
Ingredients:
2 cups chickpeas, boiled
1 cup spinach, ( blanced and make puree )
1 onion
1 tomato
2 cloves of garlic
Small piece of ginger
1 green chili
1 teaspoon garam masala
Salt
Oil for cooking
Note: put tomato, onion, ginger, garlic and green chili in a grinder and make a smooth paste.
Directions:
In a medium size skilllet, heat oil over medium flame and fry tomato mixture for 2 minutes.
Add spinach puree in it and put garam masala, stirring continuously and cook for another 5 minutes.
Add boiled chickpeas into it and stirring well until both chickpeas and spinach coated well. Season with salt, cook for a minute and ready to serve.
