2 Cucumber
2 Beetroots, grated
1/2 cup coconut milk
Salt to taste
DIRECTIONS:
First make thin slices of cucumber and keep aside.
In a mixing bowl, combine grated beetroot, coconut milk and salt.
In a flat surface, place each slice of cucumber and spread beetroot mixture on top of each slice and serve right way.
Note: You can add green chillies in mixture if you want spicy.
