Its a pumpkin season or not, but I love it and use it for main dishes to desserts, cook or bake, it always gives an exquisite taste. I never thought I would cook so much with pumpkin and did many pumpkin theme dinner party in winter that I posted earlier. My hubby is very fond of pancakes and I have already done with this many different versions. They are simple to make so you can prepare them for a spectcular weekend breakfast.
To make a good pancakes, always remember ingredients must be at room temperature. The pumpkin I used is roasted and then beaten with rest of the ingredients. I omit sugar in pancake mixture and use honey or maple syrup. You can boil pumkin to make puree instead of roasted.
Ingredients:
1 1/2 cup plain flour
1/2 cup pumpkin puree
1 cup milk
2 eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
Pinch of salt
Maple syrup or honey
2 tablespoons butter
Method:
First in a large bowl mix flour, baking powder and salt and keep aside.
Now in a bowl beat eggs with vanilla extract and warm milk and add pumpkin puree. Pour the liquid mixture into the bowl of dry ingredients.
I use electric mixture to properly integrate the pumpkin puree. Let the mixture rest for 5 minutes before pour into the pan.
Now heat the non stick pan and add a little butter, when hot pour the pancake mixture into a small round shape. When bubble start to come out on the surface turn it around and warm up for a minute.
Serve hot
