Healthy Breakfast Muffins

One of my biggest pet peeves is to cook in the morning and we are striving to reduce processed foods, so, I was completely baffled what to cook. Sometimes you also need a light breakfast to scarf down in a hurry. You also need to omit sugar and oil for my health freak husband.  At last, I just started combining few ingredients in a medium size bowl  such as oats, semolina, eggs and exotic vegetables that I always store in my refrigerator and healthy breakfast packed with all kinds of yummy goodies  are ready in a flash and delightful as can be these healthy muffins will disappear from your breakfast table almost as quickly as you can whip them up.  Sweet or savory these easy to prepare little quick muffins are perfect for breakfast or snacks. Served with little sauce as these muffins are bland. If you add little herbs then serve with yogurt.



Healthy heart savory breakfast muffins with lots of wholesome ingredients to get your day started. Easily customizable, you can use any of your favourite nuts or seeds, your choice of berries. These muffins barely rise, so fill your muffin tins completely.





Ingredients:

1 cup rolled eggs

1/2 cup semolina

3 eggs

1/2 cup babycorn, chopped

1/2 cup button  mushrooms, sliced

1/2 cup green capsicum, chopped

Salt

Method:

Combine all ingredients in a bowl, and mix togerher until fully incorporated.


Preheat oven at 200 degree C  and grease muffin tins .

Scoop batter into the  prepared muffin tins. 

Bake in the preheated oven at 180 degree C until edges are slightly brown and insert tooth pick in the center of muffins and comes out clearly . Cool down for ten minutes before remove from muffin tins.
