Baked Fish parcel with tomato and herbs

Im an ardent lover of cooking and follow my heart in kitchen when I see pile of ingredient. Baking is a slow cooking, low intensity method and it allow the fat to cook and drip away. Baking is healthier method of cooking so mostly I opt this method to cook non veg items. To get a tender perfection baked fish, always remember to brush the fish fillets with some olive oil. butter, home made pesto or tomato sauce to keep the fish moist.

Baked fish makes for a simple and quick dinner on a hectic day or something healthy can be added in when party at house. For a party , when  you are running out of time and need to cook something delicious, nothing comes in my mind what to make specially with fish, eye popping red colour organic tomatoes from kitchen garden grabbed my attention, and what with just few ingredients made this baked fish. The aroma of fresh basil and buttery texture of fish was delicious for fish lovers in party. So, why are you waiting try this simple baked fish recipe.










Ingredients: 

1 kg  Fish, ( Basa, Surmai ( haddock) )


For Sauce


4 to 5 tomatoes, make puree

3 cloves of garlic, minced

2 tablespoons dark soy sauce

Salt to taste

1 teaspoon Sugar 

2 tablespoons butter

1 teaspoon red chili powder

Silver foil to pack

For topping 

1/2 cup any fresh or dried herbs like basil, rosemarry, thyme.

Directions:

Make a pieces of fish, wash it n dry it with kitchen towel, keep aside. 

Preheat oven at 200 degree C.

For Sauce:

Heat a skillet, add butter and fry garlic for a minute till you get aroma of garlic. Now add tomato puree ( cook the tomato, let it cool and blend in a food processor ), dark soy sauce, red chili powder, salt and sugar. Cook for about 10 to 15 minutes. 

Place a piece of silver foil, pour one tablespoon of sauce and place a piece of fish on it and add one spoonful of sauce and two to three basil or whatever herbs you like on top of it. Now  close the parcel. 




In a baking tray, place all the parcels one by one and bake in preheated oven at 200 degree C for 15 minutes. Open each parcel and bake it again for another 5 minutes to thicken the sauce a bit.






 Close each parcel again.

Serve it like this way with dinner roll. Enjoy !!!
