Black rice pudding

Black rice pudding also known as Chak-Hao Amubi in Manipur. Black rice is also known as purple rice is one of the healthiest rice, rich in antioxidants, iron and protein. The grain has a similar amount of fiber and nutty taste like brown rice. There are different recipes made with black rice, but most delicious is black rice pudding with a twist. Black rice became my favorite since I ever tasted it, because of its colour and nutty texture, I was amazed when I saw this purple colour pudding similar to blue berries colour. I have already tried my hands in making different recipes  of black rice, such as salads, black rice cake, desserts, arancini that I posted here long back. Today I felt like posting my black rice kheer with coconut cream. The creamy and  nutty texture, purple colour and aroma all in a plate will definetly blow your mind !!



INGREDIENTS:

2 cups black rice, soak in water for an hour.

6 cups milk

1/2 cup sugar

3 cardamom pods

1 cup coconut cream


METHOD:

Wash rice and soak in water for an hour, then cook in pressure cooker for two whistles to save time.

Put the milk in a pan, until it thicken, add cardamom pods.

Now in the milk pan, add cooked rice and sugar. Stir the kheer continuously so that it doesn't catch the bottom as rice is bit sticky. Flame should be medium.

When kheer is almost done like after 15 to 20 minutes, and the mixture thickens further, add coconut cream, stir well and remove from the flame.


Transfer to a serving bowl,  garnish with chopped nuts and drizzle with coconut cream on top.

Serve hot or chilled as you desire, but chilled one is more tasty, enjoy !!
