Black Rice and Beetroot Soup

Black rice and beetroot, both packs  umpteen health benefits. Dark colour of both ingredients are a marker of its high antioxidants properties. INGREDIENTS :

1 Beetroot, chopped

3 tablespoons Black rice, soak in water for an hour

6 Almonds

1/2 cup Coconut Milk

Salt and Pepper to taste

1 teaspoon low fat Butter


METHOD :

In a pressure cooker, put chopped beetroot, black rice and almonds with two cups of water. After two whistle , remove from heat and let it cool

In a blender, blen this mixture. 

Now in a pan over medium heat, pour this mixture and cook for 2 minutes. Add coconut milk, salt and pepper , stir well and remove from heat. Don't cook for more time. 

Serve hot with a teaspoon of butter on top.
