Black rice stuffed Cucumber with Peanut Sauce

Black rice is rich in vitamins and high in antioxidant, so its use in everyday life is a boon for health. To cook  black rice in different  ways is not an easy job as this ingredient is not familiar among all, usually its taste and texture can't be combine with others so easily.

Black rice stuffed cucumber with peanut sauce is my trial and tested recipe which would be main dish for many, who are trying to shed few kilos in a nutrientous way. Peanut sauce enhance the taste of stuffed cucumber.




INGREDIENTS:

2 Cucumber, medium in size

1 cup Black rice, cooked

4 tablespoons cheddar cheese

10 - 12 Raisins

Salt and pepper to taste.


For Sauce :

1/2 cup peanut, boiled

2  Onions, chopped

2 Tomatoes

3 cloves of garlic

1/2 cup fresh cream

1 teaspoon red chili powder

1 teaspoon garam masala powder

Salt and pepper

Pinch of sugar

2 tablespoons Butter

METHOD :

Cut the end of cucumbers and scoop out all the seeds and make hollow to stuff. Now boil these cucumber in water for 10 minutes.

In a bowl, combine cooked black rice, cheese, raisins, salt and pepper according to taste.

Stuff each cucumber with this black rice mixture and keep aside.

SAUCE :

In a grinder, put boiled peanuts, tomatoes, onions and garlic and make a fine paste.

Now in a skillet over medium heat, add butter and fry this paste. Add red chili powder, garam masala powder, salt and pinch of sugar. Stir it continuously, don't add water. Fry in low heat for 4 - 5 minutes, add cream and stir it well. Make sure gravy becomes thicken.

PLATING :

In a plate, place stuffed cucumber and cut into pieces . Now pour sauce in plate and place pieces of stuffed cucumber on it. Sprinkle cheddar cheese on top of it and serve as main dish or side dish with roti !!
