Chocolate dipped Coconut Bars

Fresh coconut bars wrap in a buttery, creamy chocolate ganache is heavenly for chocolate lovers. In India coconut barfi is popular sweet and made in every house during festive seasons. Chocolate ganache that amazing chocolate concoction we use for everything from truffles to layer cakes is a simple enough thing. After all it's just cream and chocolate. Today  I gave a twist to this traditional coconut sweet and present in Indo-western style by adding chocolate in it.

Healthy and delicious sweet for everyone who loves coconut. They are moist, chewy, delightful, gratifying and I must say addictive. You will gobble them up instantly. It was very easy and also quick to make. Do try it !! These bars are just fantastic.



INGREDIENTS:

3 cups fresh coconut, shredded

1/2 cup sugar

1 teaspoon vanilla essence

1 cup Dark chocolate, chopped ( you can buy any dark chocolate )

1 cup cream


DIRECTIONS:

In a skillet over medium heat, add shredded coconut and sugar. Now stirring almost constantly, until you get sticky and thicken mixture. Add vanilla essence before you remove from heat.

Pour this mixture into rimmed dish. With an offset spatula spread 1/2 inch thick. Let it cool completely and cut into square size. Keep aside.

In a pan over medium heat, pour cream and heat for few minutes. Keep a  eye on cream, it should not boil or simmer it. Cream is ready when you can place a finger in it.

Scoop the chopped chocolate into the cream. Stir it gently and combine with cream well and let it sit for few minutes, till chocolate melts completely. With a spatula stir continuously until you get creamy texture.

Now dip each coconut bar into chocolate ganache and let it cool in freeze before you serve.
