Coconut patties is a delicious and one of the popular food of Madhya Pradesh. I had this long back in Indore, since then this mouthwatering recipe is in my bucket list. Fresh shredded coconut is one thing that you can add to any veg or non veg recipe to get incredible taste.
Today, as my office is off for festival and lackadaisical at home, abruptly saw leftover coconut and peanut chutney in freeze, and this remind me of coconut patties of Indore. Thought comes in my mind why not make coconut patties with some taste by adding peanut. So, I used this coconut and peanut mixture and result was awesome. Everyone at home finished it off in a minute. I'm pretty much sure of this healthy, crunchy and chewy coconut and peanut patties would be next starter in your party.
INGREDIENTS:
1/2 cup Coconut paste
1/2 cup Peanut paste
2 Potatoes, boiled and mashed
1 Onion, chopped
1 inch ginger, mincely chopped
1 teaspoon garam masala powder
1 teaspoon red chili powder
Salt
2 tablespoons cornflour
1/2 cup breadcrumbs
Oil for frying
DIRECTIONS:
In a mixing bowl, mix all the above mentioned ingredients and make a patties out of this mixture and keep in freeze for half an hour.
In another bowl, make cornflour batter by mixing with water and keep aside.
In a plate, place breadcrumbs and keep aside.
Now take out the patties from freeze and dip into cornflour batter first, then rub with breadcrumbs.
In a skillet, heat oil over high heat and add patties one by one and fry in low heat.
Remove from oil and place in paper napkin to remove excess oil.
Serve hot with mustard sauce and honey chili sauce !!
