Eggless Apple Cake

This eggless apple cake is so good with moist and soft chunks of apples. After a long gap posting a recipe of apple. A piece of cake holds the power to make everything right, when you are having a bad day. There is nothing quite like biting into a light, moist cake with a tender crumb and fresh apple chunks.




Baking is all picking up your all favourite ingredients, marrying distinct flavours, melting and beating butter, whisking a smooth batter and watching it rise  and  turn golden, aroma of vanilla essence which is an ultimate  signal of baking cake.



Eggless cakes can be tricky, but they don't always  have to be fussy or complicated. You can get spongy texture without the use of eggs that isn't a good news for vegeterian ?? Well eggs can be replaced by vinegar with baking soda, yogurt, mashed bananas, applesauce, silken tofu and all these ingredients depends on the recipe.

This eggless apple cake is healthier then your regular cake, this rich cake won't make you fret about calories. You can add this in ur kid's lunch box to fill their tummy with a  healthy treat.







INGREDIENTS :
2 cups wheat flour ( Atta )

1 1/2 cup Apple, make small pieces

1 tablespoon Baking powder

1 tablespoon Soda Bicarbonate

1 cup Sugar

1 cup Curd

1/2 cup Butter ( melted ) / refine Oil

Milk to added according to consistency of batter.

1 teaspoon Vanilla essence

METHOD :

Preheat oven at 200 degree C.

Grease baking dish with oil and keep aside.

In a medium size bowl, mix all the dry ingredients. 

Blend curd, vanilla essence and butter or oil in another bowl. Now pour this mixture into dry mixture and fold it well. Bring it to dripping consistency by adding milk if required. 

Now add apple pieces into this mixture and pour into baking dish. 

Bake in 180 degree C for 30 - 35 minutes, check with knife by insert it into cake and  if knife comes out clean then cake is ready to eat. 

Serve hot or cold with dollop of fresh cream and accompany with hot cup of tea!!
