Ghee Mutton roast

Mutton recipe is extremely popular in India, though preparations and method of cooking is  varies from region to region. The popular Rogan josh of Jammu & Kashmir, Kosha mangso of Bengal are all timè favorite of many people.  In Assam and Bengal, mutton curry is famous and cook in every occassions. Its a time of festival season, so mutton is a must to cook at home.

Delicious mutton roast one can make easily at home  with just few ingredients that will be loaded with compliments. This recipe is handed down by my  mother, simple yummy recipe needs to cook in simmer. You need patience to get good result in every fields, so why not to spend some time in cooking this recipe, just cover and cook in low heat.





In India, ghee is use in many recipes from ancient time and  our grand parents always recommend us to eat ghee (clarified butter) beacause they know the health benefits. Nowadays, ghee is known internationally and use in different recipes instead of butter or other oil. Ghee, curd and onion  are the key ingredients which makes this recipe 


INGREDIENTS:

1 kg Mutton

250 gram Onion, chopped

1 tablespoon ginger garlic paste

1 cup curd

3 pods cardamom 

3 cloves

1 cinnamon stick

1 teaspoon red chilli powder

6 peppercorns

2 bay leaves

Salt to taste

3 tablespoons Ghee ( clarified butter )


DIRECTIONS:

Wash  mutton, and marinate with chopped onion, ginger garlic paste, curd, red chilli powder  and salt. Keep aside.

Heat a skillet over high flame. Pour ghee and add cardamom, cloves, cinnamon stick, bay leaves and peppercorns, stir for 4 to 5 seconds and add marinated mutton. Stir well for 2 to 3 minutes. Now cover it and cook in  low flame. Stir occassionally to mix well.




Cook until meat becomes tender. 

Enjoy with rice or nan !!
