Meatballs Pulao

This was my version of cooking pulao in pressure cooker and paired up with meatballs, to save time. My one dish meal for your lazy weekend lunch. I cooked this recipe few days back before I turned into vegeterian.

INGREDIENTS :

Meatballs

2 cups minced mutton

1 large onion, chopped

1 teaspoon ginger garlic, chopped

1 teaspoon red chili powder

1 teaspoon garam masala powder

1 potato, boiled and mashed

2 teaspoons cornflour

Salt

Oil for frying

For Pulao:

2 cups long grain rice

2 onions, chopped

1 teaspoon ginger garlic paste

4 Black cardamom, 1 inch whole cinnamom stick, 2 cloves

2 bay leaves

2 tablespoons clarified butter ( ghee )

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon red chili powder

4 star anise

METHOD :

MEATBALLS :

In a skillet over medium heat, pour oil, now add chopped onion, chopped ginger garlic and stir it well till you get light golden brown colour. Now add minced meat, red chili powder, garam masala powder and salt to taste, stir it continuously. Cook till water evaporates from the meat, remove from gas and keep aside.

Now in a mixing bowl, add mashed potato and meat mixture. Mix it well and make balls out of this mixture. In another bowl make a batter of cornflour with water and dip each ball into this batter and fry in a non stick pan till you get light brown colour.

Now meat balls are ready to use.

RICE :

Soak long grain rice in water for 2 hours. Wash it and keep aside.

In a pressure cooker, heat clarified butter ( ghee ), add bay leaves, whole cardamom, cloves, cinnamom, star anise,  chopped onion, ginger garlic paste, rice, salt, red chili powder, corainder powder, cumin powder, all together and stir it continuously. Fry it till rice started crackle.

Add water and cover pressure cooker. Cook for 2 whistles. Let it cool for 10 minutes.

In a large plate, place rice and meatballs together, pour clarified butter on it and garnish with mint leaves for aroma.

Serve hot !!

Note : If you are cooking 2 cups rice then add 4 cups water.
