Orecchiette with Spinach

Orecchiette are handmade pasta originated from  Puglia region of Italy. Orecchiette are now famous worldwide as best known pasta from pugulia region.  It is made by kneading dough, letting it rest then breaking it in rolls and cut into tiny round size to give a shape with hand.

This recipe can be best for vegeterian as the key ingredient orecchiette pasta is  eggless and super easy to cook , cost pennies , require a bare munimum kitchen equipments.

The best vegetarian one pot  meal for weekend dinner will definetly satiate your hunger with lip smacking taste.





INGREDIENTS :

2 cups Orcchiette pasta ( home made )

1 tablespoon olive oil

1 onion, chopped

3 - 4 garlic pods, minced

1 cup spinach puree ( blanced spinach and make puree in blender )

Salt and black pepper

Pinch of salt

1/2 cup Parmesan cheese


METHOD :

Orcchiette pasta :

2 cups semolina

1 cup all purpose flour

1 teaspoon baking powder

Salt

1 cup water, plus if needed

Method to make orecchiette pasta : In a bowl, add semolina, flour and mix it well. Add salt and baking powder and mix it again using hand.

Create a well in center and pour water. Incorporate with flour mixture  using fingers. Add water when  absorbed completely and knead it to make a dough.

Continue to knead it untill smooth and elastic. Wrap it with cloth and keep for 10 minutes. Cut dough into equal portions.

Roll one portion of dough to make long rope. Use a knife to cut rope into tiny dough.

Unfurl each dough and give a shape with thumb. Transfer in baking sheet, sprinkle with semolina and keep it overnight in room temperature or you can use same day.

Method to cook pasta:

Heat oil in skillet over medium heat, add onion and garlic and stir it for a minute. When this turned into golden colour pour 2 cups of water / vegetable stock or chicken stock, add salt and let it boil. Add pasta into it and cook. Now add  spinach puree, stir it  and cook in low heat. Add water or stock if needed and cook until liquid absorbed and pasta cooked properly. Add pepper and pinch of sugar, stir it well.



Laddle pasta into plate and dust with parmesan cheese.


Tip: Aluminium foil keeps food moist, makes clean up easy , ensures it cooks evenly
