Chorizo sausages and mushroom Quiche

Many of us make quiche at home, perfect for breakfast, lunch, high tea to dinner. This simple and basic quiche recipe is so easy to make and a great presentation for guests. Pour the filling into the pie crust, pop it in the oven and 45 minutes later your quiche is ready. You make it the day ahead, cut into a desire shape just before serving.

Very often I make quiche at home as it is very easy, delicious and tummy filling recipe. Recently I made chorizo sausage and mushroom quiche for my friend's 3 years old daughter's birthday party in a bulk, so I cut into square size, and I was surprised when I saw kids gorged on this quiche. Here, I've taken pic in a hurry before I serve. You can add anything in quiche you like and I think this would be a hit recipe in kid's birthday party too in future.






INGREDIENTS:

4 eggs

1 cup button mushrooms, cut

1 1/2 cup chorizo sausages, cut into cubes

1 large onion, cut into medium size

1 red bell pepper, cut into medium size

1/2 cup milk

1 cup spinach, chopped

salt and pepper to taste

1 cup Cheddar cheese

1 unbaked pie crust (I have used homemade)

For pie crust:

1 cup all purpose flour

3 tablespoons cold butter, cut into cubes

2 tablespoons cold water

Mix flour with butter cubes using flour. Then knead with cold water and keep in fridge for 20 minutes.

METHOD:

Preheat oven at 200 degreeC.

In a skillet, fry chorizo sausages till you get light golden colour and keep aside.

In a bowl, put eggs and milk and whisk it.

In another bowl, add mushrooms, spinach, chopped onion, red bell pepper and fried chorizo sausages. Pour egg mixture, add salt and pepper. Mix it well.

Now in a baking dish, rub butter and place pie crust. Now pour mixture into the bottom of pie crust.
Sprinkle cheddar cheese on top and bake uncovered in 180 degree C for 30 to 40 minutes, until firm and lightly brown on top.



Let it cool before serving.
