Coconut flan

This luscious dessert is not only beautiful, but really simple to make and great for any occassion. Flan is sweet in taste and silky smooth in texture which melts into mouth like icecream is one of my easiest way to satiate one's sweet tooth.

It is one of those desserts which you indulge in and donot feel like u r having too much. Spring is here, and weather too is my ally for now, very pleasant with nippy nights, what guests can ask for more in dessert.






INGREDIENTS :

1 cup coconut milk

1 cup condensed milk

6 eggs

1 teaspoon vanilla essence

1/3 cup shredded coconut

1/2 cup sugar


METHOD :

Preheat oven at 200 degree C.

Heat sugar in a pan over medium heat, stirring it continuously until melted and turned into golden colour and sticky in texture.

Pour this golden syrup in ramekin baking bowl or baking pan, swirl golden syrup around bottom and sides of the bowl or pan to coat well. Keep aside.

In a blender add  eggs , coconut milk, condensed milk, vanilla essence and shredded coconut. Pour this mixture into caramalised bowl or pan.

In a baking tray, add water and then place baking bowl or pan. Then bake in oven at 180 degree C for 45 minutes.

Check by inserting knife in it, if knife comegys out clear, then it is done.

Run a knife around the edges of the bowl. Invert a serving plate over the bowl, hold tightly and quickly turn over. Gently shake the mould to release.

You can garnish it with fresh shredded coconut or nuts.


Refrigerate it before you serve.
