Coconut and rice flour barfi

Sweets and festivals , this combo is known to whole universe !!
We all are aware that coconut and festivities go hand in hand because the sweets made from them are auspicious and are used as offerings at sacred rituals performs during festivals. 

During Bihu festival in the month of January , aroma of  harvest is dancing everywhere and sweets prepared from rice with coconut and sesame seeds are very common among Assamese community. This barfi is my own creation made out of coconut , jaggery and rice flour with chopped almonds .The taste and juices that emanates from the fresh coconut give the special richness to this delicacy. Traditionally every sweets are made with jaggery instead of sugar. So , in this recipe I used jaggery which enhance the taste . This is a quick and easy recipe .






Ingredients all you need are : 

2 cups freshly grated coconut 
1/2 cup rice flour 
1 cup jaggery , grated 
1/2 cup almonds, chopped 

Directions :

In a large plate combine all the ingredients. Now heat a skillet , add this mixture and stir it continuously until you get the binding texture . Let it cool in another plate and with the help of spatula place the mixture evenly . Once cooled down cut into your desired shape and serve . You can store it in refrigerator for a week.
