Lauki Barfi ( Bottle gourd sweets )

Festive season is knocking at your door and you must welcome it with some sweets. Here is a very healthy and tasty barfi you can make with just few ingredients.





Ingredients:

 2 cups Bottle gourd ( lauki ) - finely chopped, don’t grate.
1/2 cup sugar 
3 tablespoons clarified butter 
2 tablespoons semolina ( sooji ) 
Chopped almonds for garnishing 

Method : 

First peel the skin of bottle gourd and finely chopped. Squeeze out all the juice from chopped bottle gourd.

In a skillet over medium heat, add clarified butter and cook chopped bottle gourd on low flame. Stir it often. 

When it is half cooked add sugar and stir it continuously. Now add semolina and mix it well. Remove from heat. 

Grease the pan with clarified butter and transfer cooked bottle gourd. With the help of spatula spread  it evenly keeping 1 inch thickness on the edges . Apply silver leaves on top then put chopped almonds on top of it. You can add rose petals for extra gorgeous look (optional ) .

Once barfi cooled down, cut  into square or diamond size before serve.
