Oil free baked Chicken with plum sauce

Look no further than this recipe of mine , if you are searching to make oil free chicken and in a different way. I have been growing up seeing my mother , who loves to make plum sauce and jam every season. Vibrant colour of plum alluring me a lot , which urges me to cook and serve in a many interesting ways.  This recipe I made last season and luckily photos were saved in my laptop, so here I’m sharing my oil free baked chicken recipe with you.






Easy and simple dish with a sweet , sour and savoury bite that will definitely sock your taste buds. Sauce is the king of this dish. Fresh plum, honey / jaggery , garlic and back pepper combine to  make a sauce  that enhance mouthwatering flavour to tender, juicy chicken. This sauce would also be a great accompany with pork, turkey or duck. In fact, when you make this sauce double the time and have it on hand for basting when you are cooking on the grill. That would be amazing.




In season , plums add a burst of sweetness to the juicy chicken dish, whilst the ground black pepper adds a nice punch. You can use store bought plum sauce instead of fresh one. You can always tell , when the cook is happy - the food has perfectly balanced flavour . So cook this oil free dish happily. 


INGREDIENTS:

500 grams boneless chicken 
200 grams fresh plums, remove seeds 
4 tablespoons honey / jaggery 
2 tablespoons  ground black pepper
1 teaspoon red chili powder
Salt to taste 


DIRECTIONS :

First marinate the chicken with salt and black pepper for at least 2 to 3 hours.

Make a sauce : Boil plums in water till plums are softened. Remove from water, peel the skin of plums and deseeded. Blend it in a blender to make a puree. 

In another skillet, add this plum purée, jaggery , salt , black pepper and red chilli  powder . Stir it continuously and cook till you get thick consistency. 

Preheat oven at 200 degree C. Now rub this sauce with marinated chicken pieces and place in a baking tray . Cover it with silver foil and bake for 30 minutes at 200 degree C. Remove the cover and again bake it for another 15 to 20 minutes at 180 degree C.

Sprinkle ground black pepper on top and cut the pieces ,when you serve .
