Chia pudding with saffron milk and almonds

Is it possible to have pudding in breakfast without cooking !! And I would say yes very much possible. This recipe doesn’t require cooking at all , it just require an hour long or overnight rest to give the chia seeds time to plump  up. You are going to love this healthy gluten free treat, enjoy as a snack, dessert or breakfast.






My delectable no cooking chia pudding recipe with saffron milk and almonds  is creamy, filling and healthy treat as we all know chia seeds are high in fibre and full of nutrients, for protein I love to add few almonds. This creamy chia seeds pudding recipe tastes like a creamsicle and super simple and adaptable . You can make this chia seeds pudding with any type of milk, regular, soy, coconut , almond , hemp or hazelnut. I love to make with saffron milk because of its fragrance and colour.



One of the lazier breakfasts recipe, all you need is to spoon some chia seeds in a jar top it up with your choice of milk and then pop it into the fridge, it sits in the fridge overnight. By next morning, a magical chia seed pudding is ready to be served in breakfast with fresh fruits or dry fruits , just give it a very  good stir to break apart any clumps. Sometimes I love to add organic honey to sweeten the recipe or you can have without adding any sugar.

This breakfast can be keep in refrigerator for several days, so you can make a batch of chia seed pudding at a time.


INGREDIENTS:

1/2 cup chia seeds
3 cups of milk
1 teaspoon of saffron
10-12 almonds, chopped
Honey / maple syrup


INSTRUCTIONS:

In a large bowl , soak saffron with milk for half an hour , now add chia seeds into it .Gently stir together the chia seeds and saffron milk .  Cover it and set  in the refrigerator overnight.

In the morning , give it a good stir to breaking apart clumps to get the pudding texture. If required add more milk to get creamy texture. Add chopped nuts into it . Drizzle some honey to sweeten the recipe. Garnish with chopped almonds and honey on top.

You can add any topping whatever you like.
