If we talk about the crunchiest veggie than bell pepper / capsicum comes straight way in our mind . In India it can be make in a multiple way and love to eat with roti or rice . My mother always makes a bell pepper fritters , it goes well with rice and dal.
Did you ever try baked stuffed bell peppers that are what dinner dreams are made of. They can be filled with any combination of meat, veggies , starches, beans , sauces making them the ultimate leftover vehicle .
These protein packed stuffed peppers make a filling vegetarian meal . I love to eat sweet stuffed bell peppers with different fillings. Today I made stuffed bell peppers with cottage cheese, herbs and few spices , it becomes more delicious to eat with rice or roti when served with light orange gravy.
If you haven’t tried it yet, you must.
Ingredients:
8-10 bell peppers ( green, orange and red )
2 cups cottage cheese/ paneer
1 tablespoon parsley
1 tablespoon mint
1 tablespoon dill ( optional )
1 teaspoon black pepper
Salt to taste
2 green chillies, chopped
1 tablespoon amchur powder ( dried mango powder)
Oil for cooking
For orange gravy you need :
2 onions ,
2 tomatoes
4-5 garlic cloves
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon red chili powder
Salt to taste
Pinch of sugar
2 cups milk
Method of baking stuffed bell peppers :
Preheat oven at 200 C.
First wash each bell peppers, use a small knife to cut wide circle round each bell peppers to remove seeds and stalk. Spray each bell pepper with cooking oil and season with salt .
Filling : In a large bowl , mix cottage cheese , chopped parsley, mint and dill , green chillies, salt , black pepper and amchur powder. Evenly divide the mixture among the peppers . Place in baking tray and bake it in 180 degree C for 20 minutes.
For light orange gravy :
In a blender , put chopped onions, tomatoes and garlic and blend it until you get smooth paste .
Now heat a skillet , add oil , fry this paste for 3-4 minutes, add all spices , salt and sugar . Stir it continuously. Add milk and cook for few more minutes. Sauce is ready .Remove from gas stove.
How to serve : In a serving plate , pour this sauce first than place each baked stuffed bell peppers and serve with rice or roti .
