Beetroot Shamak rice kheer / Barnyard millet pudding

You can call it Shama rice / Shamak rice  or barnyard millet to this tiny mighty grain, which is white in colour and little bigger in size than semolina. Brimming with protein, rich in fibre, and packed with iron and vitamin B, this millet has the least calories and carbs in compare with other millets , ideal for those who are on high protein diet and a wholesome kheer perfect for fasting days. This millet do not belong to the rice family, but it is a healthy substitute during fasts in India and those who are looking for gluten free dessert menu they can add this recipe. 






Today, I’m sharing with you a very simple sweet dish made with shama rice , best part is the hue of beetroot that enhance the beauty of this recipe. It takes less time to cook unlike rice kheer , and combines the unique, earthy flavour of the shama millet with the aroma of cardamom and creamy texture of milk. I’m pretty sure that this would be your next dessert when you see how easy to prepare , delicious and delectable. 





Ingredients: 

3 cups ml milk / 750 ml milk 
1/3 cup shama rice 
4-5 tablespoons sugar 
2 tablespoons fresh beetroot juice 
4-5 cardamom pods
Few almonds , chopped for garnishing.

Shama Rice:

Wash and soak in enough water for an hour. 
Drain and keep aside. 

Method:

Use thick pan and bring milk to boil on medium flame. When it started boiling add shama rice. Stir it well . Reduce flame medium to low. 

Cover the pan and cook in low flame till the rice gets cooked properly. Stir on intervals . It takes 15-20 minutes to cook on low flame.

Add 4-5 tablespoons of sugar , or you can add more according to your taste. Stir it well till sugar dissolves. Now add beetroot juice and cardamom pods. Stir it and simmer for a minute or two. 

Garnish with chopped almonds. 







Now your creamy shama kheer is ready , you can serve hot or chilled !!
