Eggless walnut coffee cake

Is there anything better than a moist and buttery cake for evening tea ??
Today I’m gonna share with you a recipe of eggless coffee cake with walnuts which looks fancy but very easy to make. I paired it up with whipped coffee as dalgona coffee ( Korean coffee) is creating sensation over internet.








I wanted to give this coffee a spin, therefore I chooses this whipped coffee over regular icing. A coffee cake with a velvety smooth and sweet coffee foam on top. The combination of coffee cake with bittersweet coffee layer is a combination of match made in heaven . The only difference of dalgona coffee mixture and this whipped coffee cream is the use of more sugar with a bit of coffee to make it sweet with a tinge of coffee flavour.



I love the excellent texture of this easy eggless walnut coffee cake recipe. Be prepared it won’t last long. You can’t eat just one just like potato chips.This can be your quintessential breakfast coffee cake, it’s like  a marriage between a cake and coffee.




Ingredients :

1 1/2 cups plain flour
1/2 cup cocoa powder
1/2 cup walnuts, chopped
1/2 teaspoon instant coffee ( mix it with 2 tablespoons hot water )
1/2 cup butter, melted
1 cup sugar
1 cup milk
1 teaspoon baking soda
11/2 teaspoon baking powder
Pinch of salt
1 teaspoon vanilla essence
Few more walnuts for garnishing

For topping :
1 cup sugar
1/2 teaspoon instant coffee
2 tablespoons very hot water

In a mixing bowl, add sugar , coffee and hot water . You can use your hand or electric beater to whip the coffee mixture until it is light brown,  fluffy and holds stiff peaks when the whisk is removed. Now mixture is ready and keep aside in freeze.

Method of baking cake :

Preheat oven at 180 degree C.

Grease a baking tin with butter.

In a mixing bowl, add all dry ingredients and mix it well . Now pour melted butter , instant coffee, vanilla essence  and milk. Mix it well or you can use electric beater. Add chopped walnuts and mix it by using hand.

Pour the mixture in baking tin and place in preheated oven. Bake at 180 degree C for about 20 minutes. Check it by inserting tooth pick whether it is baked or not . Once baked remove from oven and let it cool.

When you are ready to serve, take out whipped coffee from freeze and place on top of this cake. Decorate it with walnuts on top. Sprinkle pinch of cocoa over it . Serve immediately!!



Tips : Keep this cake in freeze , if few pieces left out , otherwise whipped coffee will melt.
