Oil free chicken with orange sauce

The hankering for something delicious goes on when I saw these vibrant oranges in my pantry and so came with these oil free chicken laden with proteins and smothered with the most drool-worthy orange sauce were just what I was craving for . It’s a quarantine period and many ingredients are not handy to make something exotic. Chicken pieces that are cooked in simmer then coated in a sweet , tangy, spicy and delightfully sticky orange sauce made me fall in love .  The combination of chili flakes and jaggery really offsets the citrusy, sweet taste of orange juice . I tend to eyeball when cooking, always make extra sauce to baste with . Instead of store bought orange marmalade , I love to make fresh orange juice with soy sauce and jaggery in place of brown sugar.





I just did little experiment with fresh orange juice and thin slices for the first time and it turned into a lip smacking sauce that left me astounded . Soy sauce brings a savory , salty compliments to the sweetness of orange juice. I love to put  thin orange slices into sauce to look different but honestly guys these slices were delectable more than sauce.




Here , I’m sharing my recipe of oil free chicken cooked with freshly cooked orange  sauce is one of my innovative recipe which is like out of the world the comments I received from my guests when I served this dish.




Ingredients:

500 grams chicken with bones
Salt to taste
1 teaspoon ground black Pepper

For sauce :

2 oranges juice
1 orange , thin slices in round shape
1 tablespoons soy sauce
1 teaspoon red chili flakes
2-3 tablespoons grated jaggery
1/2 teaspoon red chili powder
1 teaspoon Cornflour
Salt to taste

Method :

First marinate chicken pieces with salt and pepper and keep aside for 2-3 hours.

In a non stick pan over medium heat , add marinated chicken . Cover it and cook in simmer until chicken are cooked properly.

For sauce :

First take out juice of two oranges.

Heat a non stick pan, add orange juice and orange slices together , bring it to boil on low heat. Add grated jaggery , red chili flakes, salt and red chili powder. Stir it continuously for sometime. Mix cornflour with water than pour into it and stir it properly. Let it cook till the sauce becomes thicken.

Pour this sauce into the pan of chicken and cook till the chicken coated with sauce properly for about 3-4 minutes.



Serve with steamed rice or parantha.
