Spinach Rice ( Palak chawal)

Spinach rice ( Palak rice ) is an Indian one- dish nutritious meal that is super easy to cook. The vibrant green colour makes the rice more attractive and it’s not only a treat to eyes but also to taste buds. 







When I plan to cook something during a weekend lunch , nutritious meals that are easy to cook and come together quickly, are my main considerations. The thought of making this rice instantly came in  my mind while looking at the crisp bunch of spinach in my pantry. Everyone who is closed to me know that procuring and cooking whatever is in season is one of my biggest drivers in kitchen. Whatever is growing locally or in our garden always brings out the hidden forager in me. Looking at the gorgeous spinach , I wanted to find a new ways to enjoy this beautiful bounty. 


Simple , quick and delicious who will say no to this spinach rice. It is the magic of the aromatic green spices so full of coriander that transforms the spinach rice into such a delectable dish or the simple rustic flavour of spinach that pleases the palate and health.  The ingredients used in making this Palak rice are basic and can be found in every well maintained  Indian pantry. Use this spinach rice to treat your vegetarian guests or as a tiffin treat to kids or have it in lunch or dinner with a bowl of raita or shorba.





It’s a homely version and healthy rice that I make in pressure cooker. You can add your choice of mixed veggies too, in fact fresh green peas and potatoes go very well. 


Ingredients:

2 cups basmati rice , 
1 bunch spinach 
1 bunch coriander 
2-3 green chilies 
3-4 garlic cloves 
1 onion, chopped
3-4 green cardamom 
3-4 cloves 
2 small pieces cinnamon sticks 
Salt to taste 
Pinch of turmeric 
1/2 teaspoon sugar
Oil for cooking 
1 teaspoon cumin powder


Method:

First wash the rice properly and keep aside for 30 to 40 minutes , if you have time. 

Add spinach, coriander, green chilies and garlic cloves and onion in a blender and blend it until you get smooth paste. 

Heat pressure cooker over high heat, add 1 tablespoon of  cooking oil, add cardamom, cloves and cinnamon sticks than pour the spinach paste and cook for 3-4 minutes. Now add washed rice , salt , turmeric , sugar , cumin powder. Fry it for 5-6 minutes . Now add water , if you have given two cups rice than add four cups of water , this is the measurement of water in pressure cooker. Cook for 2-3 whistles and let it cool for 10 minutes . 

Serve hot with anything you like to. 

Note: You can add red chili powder if you want more spicy.
